1 ½ cups unsweetened coconut, shreds or flakes
¼ cup coconut oil, solid or melted
1.5 tablespoons pure maple syrup
OPTIONAL PROTEIN BOOST: 1 scoop Vital Proteins Collagen Peptides
Chocolate Dip Layer
1/3 cup 70% cacao, dairy-free, dark chocolate chips (I recommend Equal Exchange Brand)
1 teaspoon coconut oil
¼ tsp vanilla extract
4 tablespoons dark chocolate chips
1/2 teaspoon coconut oil
1/8 tsp vanilla extract
Line a baking sheet with parchment paper
Blend coconut, coconut oil and maple syrup in a blender/ food processor.
Scoop 1 tbsp or cookie scoop of firmly-packed balls of coconut mixture onto the prepared baking sheet, spacing them evenly apart.
Freeze for 15-20 minutes.
About 5 minutes before the balls are done freezing, prepare the chocolate dip layer.
Stovetop: On low heat melt chocolate chips, coconut oil and stir
Add vanilla extract
In a medium, microwave-safe bowl, add the chocolate chips and coconut oil.
Heat in 20-second increments until just softened and melted. Stir in between heating, until smooth.
Add vanilla extract
Remove coconut balls from the freezer.
Dip the bottom of one ball into the bowl of melted chocolate
Lay back onto the baking sheet
Add Chocolate Drizzle ingredients to the bowl of leftover melted chocolate.
Heat in the microwave in 20-second increments until just softened. Stir until smooth.
Using a rubber spatula, scrape melted chocolate into a zip bag
Trim corner off of bag
Squeeze and drizzle in zig-zag pattern over dipped coconut balls
Place baking sheet into the freezer for 10-15 minutes. Thaw for 10-15 minutes before serving. Enjoy!
